Ingredients:

Serve as a brunch entrée with a salad and fresh fruit.

  • 10-12 oz pkg frozen chopped spinach, thaw & squeeze dry
  • 4 egg whites or equivalent egg sub
  • 16 oz nonfat cottage cheese
  • 8 oz fat-free sharp cheddar cheese, cut into small cubes or shredded
  • ¼ cup whole wheat flour
  • ¼ tsp garlic powder
  • Black pepper, to taste

Instructions:

Preheat oven to 350 degrees.  Mix all ingredients together & place in an 8 by 8 inch baking pan lightly prepared with nonstick cooking spray.  Bake for 35-45 minutes (until knife comes out clean).  Cool 10 minutes.

 

Note:  I used “Lifetime” fat-free cheddar cheese.
